Taro shoots are the young rhizomes of the lotus, consisting of a segment between nodes and the apical bud.Taro shoots and taro are homologous organs; under suitable conditions, the swelling of the shoot becomes a taro (thus, strictly speaking, taro is an enlarged rhizome).Hubei people most commonly consume taro shoots.In fact, there was a tradition in ancient times to gather and eat taro shoots, as recorded in “Taro Vegetable”in the Ben Cao Gang Mu.
