1. Rinse the purchased river shrimp thoroughly, trim them, and drain the water.
2. Cut the green onion into sections and ginger into strips. Soak the dried vermicelli in cold water for 1 hour, then drain the water and set aside for stir-frying.
3. Heat a pot with oil, add the onions and ginger when it's slightly hot, stir-fry until fragrant, then add the river shrimp and quickly stir-fry.
4. Add an appropriate amount of soy sauce, mollusk sauce, a little rock sugar, continue stir-frying for a moment, then add the dried vermicelli, a small amount of water if needed, continue stir-frying until the vermicelli starts to soften, switch to low heat and cook for 5 minutes. Once the sauce thickens, turn off the fire and let it sit for 10 minutes before serving, garnish with green onion, and it's ready to serve!
