Braised Eggplant

    BraisedEggplantIngredients:Long eggplants2 pieces,Pork belly100 grams,Chili pepper1 piece, 5 cloves of garlic, enough oil, 2 spoons of soy sauce,1 spoon of sugar,2 spoons of wine, 15 tablespoons of oil, 1/3 teaspoon of salt,1 spoon of chicken powder, 1 spoon of cornstarch,Star anise(cloves) 2 pieces, chopped three stalks, sliced garlic three cloves,Chopped cilantro two stalks,Doubanjiang (fermented broad bean and chili paste) 1 spoon,1 tablespoon of cornstarch mixed with water to make a sauce.

1 Cut the eggplants lengthwise into 4 pieces, then cut them crosswise into segments. Cut the pork belly into strips.

2 Slice the chili pepper and smash the garlic.

3 Heat oil in a pan, fry the eggplant briefly, then remove it immediately.

4 In the same pan, add 2 tablespoons of oil, stir-fry the chili peppers and garlic first, then add the pork strips until they change color. Add the fried eggplant, soy sauce, sugar, wine, and a little seasoning, then serve on a plate.
