3. Fry green beans until they are seven or eight-tenths cooked, i.e., the surface is slightly wrinkled, then remove them;

4. Leave some residual oil in the pan, add chopped ginger, scallions, and garlic, as well as red chili powder, stir-fry to release their fragrance;

5. Add pork and stir-fry until it changes color;

6. Stir-fry until the pork is cooked, then add sprouted vegetables, continue stirring;

7. Add fried green beans and stir together;

8. Season with salt and black pepper before serving;

9. Stir evenly and serve in a bowl.Tips

1. Fry the green beans until seven or eight-tenths cooked first, because uncooked green beans are toxic, so use low heat to avoid over-browning the outside while undercooking the inside;

2. If you want to save oil, choose a pan with a smaller base diameter for frying;

3. Stir-fry with ginger and garlic first, then add pork and stir-fry, finally adding fried green beans together. For a drier texture, extend the stir-frying time, season with salt and other ingredients before serving.
