闽南糍团
简介
每逢春节,闽南农家有做糍团的习俗。特别在夏季,冰凉爽口糍团,质地柔滑,可解暑气。
做法
(1)将糯米洗净,去砂和其它杂质,置清水中浸泡半天后沥干。然后碾成粉末,加水揉搓成团,以手指轻按,粉团有柔软的感觉为准。再把米粉团分别搓捏成12个圆球,按扁后放沸水中焯至上浮,放钵中,用煎匙或光滑的木棍趁热搅散,越散越好。最后搁3小时,凉后即可。
(2)把芝麻放在炒锅内炒熟,凉后和白砂糖拌匀。
(3)用筷子或汤勺把制好的糍团取下一小块,在馅中滚一下,沾满芝麻和白糖,即可食用。
