简介
蛋菰,是三明的特色小吃,用鸡蛋制成。
做法
将鸡蛋加少入许食盐和适量温水,用筷子反复打散,然后把猪肠一头用线扎紧,将蛋从另一头灌入,满后用线扎牢。之后握蛋肠一头的线,放在锅中约50度的水内来加摆动,待至水沸时,立即将蛋肠取出,切成半寸长的小段,备用。烧汤时,将肠段投入,佐以香菰、红菰等配料,加少许味精、食盐、葱花等,煮至蛋肠两头呈磨菰形时,起锅即成,清淡爽口,为宴客佳肴。
