These days, I'm resting at home.Taking care of my old back.Going to the market to buy vegetables shouldn't be a problem; I bought some sea prawns andsea bass.When I was young, these sea prawns were very cheap, costing only one jiao per scoop.Now they are not expensive either, five yuan per catty.Using sea bass and sea prawns to make dumplings,dumplingsbring the ocean flavor with extra freshness.
Ingredients: sea bass, sea prawns,leek, garlicginger,flour,soy sauce, oyster sauce, rice wine,white pepper powder, saltmonosodium glutamate,and sesame oil.


Steps:
1. Knead the flour with an appropriate amount of water into a dough and let it rest for 20 minutes.

2. Blanch the sea prawns in boiling water until they open up.

3. Remove the shells from the blanched sea prawns, clean them, and set aside.

4. Remove the skin and bones of the sea bass, then mix with ginger paste to make fish mince.(I use a wax paper for cutting to avoid washing the chopping board)

5. Add pork mince, chopped scallions and ginger, and soy sauce.pork belly,

add sea bass mince, rice wine, white pepper powder,and add water in several stages while stirring until it becomes a moderately soft filling.7. Clean and chop the leek.

8. Combine all ingredients, adding salt, monosodium glutamate, oyster sauce, and sesame oil.

9. Mix well to form the dumpling filling.

10. Roll out the dough into wrappers and fill with the mixture.

11. Cook the dumplings in boiling water until done.

Boil water and add dumplings to cook until done.
