Braised Dill with Tofu

 Today, it's a simple and quick dish.A cold dishis refreshing without being greasy, fresh and appetizing.

In my childhood, I often heard Father say that eating home-cooked food is the most comfortable.At that time, I didn't understand; these words only entered my ears but not my heart.Recently, when I think about it, I realize he was right.A bowl of clearcongee, a few small dishes, is home's taste.

For this dish, the main ingredients arecelery leafandtofuwhich are very refreshing.The aroma of sesame sauce can make simple cold dishes taste rich and full-bodied.Additionally, I like to add a small amount ofchili pastein the cold dish,slightly increasing its freshness and spiciness, making the thick sesame sauce more refreshing to eat.The ingredients are: 250g tofu, 150g celery leaf, 2 cloves of garlic,

soy sauceone tablespoon, vinegar one teaspoon, a little sugar, white pepper one teaspoon, sesame sauce one tablespoon, chili paste one tablespoon, two teaspoons of sesame oil.The steps are as follows:1. Boil a large pot of water with some oil and salt, add celery leaf for half a minute2. Remove and rinse under cold water to cool down, squeeze out the excess water from the celery leaf, chop it finely and set aside.3. Place tofu in a bowl and mash it by hand, then mix in chopped celery leaf.4. In another bowl, add soy sauce, vinegar, white pepper, sugar, and sesame sauce, stir to make a smooth sauce.
5. Add sesame oil, crush the garlic into paste, and mix thoroughly to form the sauce.
6. Pour the sauce over the tofu and celery leaf mixture, toss well.
7. Finally, add chili paste and toss again before serving.
Note: Use
brine-curdled
or low-water content gypsum tofu for this dish,
do not use
gelatinous tofu
Tips:
.Adding a small amount of vinegar to the sauce can make the sesame sauce more refreshing, but do not add too much so that only the vinegar aroma and not the vinegar taste is present.Tofu or gypsum tofu with lower water content can be used, but not tofu.A little vinegar in the sauce can make the sesame paste refreshing, but do not add too much; it should have only the scent of vinegar without the sour taste.
Sesame paste will be more appetizing if a small amount of vinegar is added to the sauce, but do not add too much so that only the smell of vinegar and no sourness is present.
