Lemongrass Chicken Thighs Recipe:
1. Wash the chicken thighs and cut a few slashes with a knife to facilitate flavor penetration. Marinate with lemongrass paste and cooking wine for one night.
2. Place the marinated chicken thighs on a baking sheet lined with foil (use a rack if possible).
3. Bake at 400F/200C for 20 minutes, remove and discard any water in the tray (not needed if using a rack), flip and bake for another 15 minutes. Brush with honey and further roast on both sides until golden.
