Preparation:
1. Prepare chicken breast or thigh meat, along with some vegetables like colored pepper shreds, cucumber shreds,
mung bean sproutsham shreds, shrimp, and a few scallion pieces,
ginger slices, and Sichuan peppercorns for the cooking process.
If any of the vegetables need blanching, prepare them beforehand;2. In a small pot, add an appropriate amount of water, then place chicken, scallions, ginger, and Sichuan peppercorns in it.,
Bring to a boil over high heat, remove foam, continue cooking until the chicken is fully cooked,then take out to cool down.
Once cooled, shred the meat into strips and set aside.3. Prepare the sauce by putting a bit of
sesame pasteinto a bowl, diluting it with cold boiled water, then add MSG, salt,
vinegar,sugar,chicken powder, sesame oil, and chili oil.
Mix thoroughly. Add minced garlic and some sesame seeds at the end for extra flavor; you can also include Sichuan pepper oil or crushed peanuts as needed;4. In a pot, add water and bring to a boil,
then cook
fresh noodles.Cook until done, then rinse with cold water to cool down, drain well, and place in a container.
Pour over some cooked oil to prevent sticking, cover with cling film, and refrigerate for a while;4. When ready to serve, place the noodles into a bowl,add
peanuts,
cooked
buckwheat noodles.Top with chicken shreds, bean sprout shreds, ham shreds, and various vegetable shreds as well as shrimp;
finally pour the sauce over it...5. Garnish with
chili peppers.
Add the green and red bell peppers,
add the Sichuan peppercorns,and serve immediately.
