1. First, kill the dog after immersing it in cool water for 30-40 days, then pour boiling water over it to remove the fur, cut it open from the belly and separate both sides, remove the internal organs, and clean with clear water.

2. Place the pot on heat, add boiling water, blanch the dog meat, then cook in a new pot of boiling water. Rub withWhite soy sauce,and hang it on an iron skewer.Fry over charcoal fire after smoke clears until golden brown, and set aside.

3. Place the pot on heat, add heated pork fat, addKernels of Sichuan pepper,then remove them, then add all seasonings, broth, and the roasted dog meat. Cover with a lid and simmer over high heat for about 30 minutes, thicken with starch, and serve in a large platter by cutting the skin.

Tip

1, snow cabbage is the same as snow peas.Snow peas are commonly preserved in our region during winter.
2, pickled vegetables, being preserved foods, are not recommended for frequent consumption; a single occasion is fine.
