Cake base preparation:Separate the egg yolks and whites.The bowl for the whites must be oil- and water-free.Mix the egg yolks with fine sugar until smooth using an electric mixer.
Add vegetable oil (or sunflower oil, etc.) in three parts,mix well after each addition.
Gradually add water (or milk),lightly mix to combine.Sift the low-gluten flour and pour it into the egg yolk mixture.
Mix gently with a spatula until smooth, forming the egg yolk batter.Set aside the prepared egg yolk batter for later use.
Start whipping the whites.Add all the sugar at once; start with low speed then high speed,whipping until soft peaks form (lifting the whisk should produce a curled tip).Transfer 1/3 of the whipped whites into the egg yolk mixture and gently fold.
Repeat this step twice, adding another 1/3 of the whites each time.Gently fold the combined batter until well mixed.
Pour the batter into a baking sheet lined with parchment paper or oil paper,spread it out evenly, and shake to remove large air bubbles.
Place the baking tray in a preheated oven at 180 degrees Celsiusand bake for 15 minutes until the surface is golden brown.
Raspberry preparation:
Cut the strawberries into small pieces.
Whip 100 grams of cream with 10 grams of sugar using an electric mixer until stiff peaks form.Prepare a new sheet of parchment paper or oil paper.
Remove the cake from the oven while it's still hot, and peel off the parchment or oil paper.
Place the cake bottom-side up.
Once cooled slightly, flip the cake over so that the surface is now facing upward.Spread a layer of whipped cream on top of the cake,
then sprinkle with strawberry pieces.
