Ricemochirice flour (sometimes called glutinous rice flour)
Method:
1. Use a large amount of
rice flour(some places call it sticky rice flour)
Glutinous rice floursugar, mixed with cold water to form a thin paste, with a ratio of 1:2.
2. Cook over simmering water while constantly stirring until the mixture forms grainy consistency (do not cook too long or it will be too dry and tough when fermented).3. Mix some yeast with warm water, then stir into the cooled rice paste thoroughly before pouring into a container to ferment (I used a storage box). It usually takes about 5 hours in warmer weather; once the volume increases and there are many bubbles on the surface, it's ready.
4. Sprinkle
roasted sesame seedsIt can be used when it appears in a granular form (do not overheat and dry too much, as this makes fermentation difficult and results in a drier texture).
steam for 25-30 minutes before serving.
4. Sprinkle with toasted
sesame seeds, place in a steamer pot with boiling water, and cook using high heat
steam25-30 minutes are sufficient.
