Steps:
1. Mix flour with water to form a smooth dough, cover with cling film and let it rest for twenty minutes;Take the fresh meat filling; at home, I always use fresh meat that I chop myself.Mince should be 3:7 lean to fat ratio, making sure the filling is neither tough nor greasy. The homemade chopped meat is much more fragrant than store-bought minced meat. Add salt, chicken powder, dark soy sauce, and sesame oil to the meat filling; stir a little bit.Add five-spice powder, thirteen spice powder, green onion and ginger, and mix well.



2. Heat two spoons of oil in a wok, add a few Szechuan pepper grains, fry until fragrant then remove them and turn off the heat. Pour the hot oil over the five-spice powder and green onions on top of the meat filling; stir to combine.Add 50 milliliters of water three times into the meat filling while stirring in one direction each time after the previous portion is fully absorbed, ensuring juicy and flavorful meat filling.Take the rested dough and knead it until smooth, divide into two parts. Take one part, dust with a little flour, and use a rolling pin to roll out the dough from all four corners into a rectangle.



3. Cut the dough sheets horizontally and vertically in half.Do not apply filling to the upper right corner.Fold the upper right corner down over it.



4. Then fold the sheet to form a square.



5. Gently press from the center of the pie outwards, forming a round pie about 1.5 cm thick.



6. Heat a non-stick pan and lightly grease with oil; place the meat pie in it.



7.Fry over low heat until both sides are golden brown and the filling is fully cooked.Heat up, drizzle a thin layer of salad oil,place the meat pattiesand cook over low heat until both sides are golden brown and the filling is fully cooked.
