How to Make Cold Stir-Fried Potato Threads

This is simple, mainly requiring good knife skills; otherwise, using a grater to make shreds would be fine.
1. First,slice the potatoesinto thin strips;
2. Boil half a pot of water, pour in and blanch until cooked through, about two minutes, then drain and rinse with cold water;
