Steps:
1 wash and cut the vegetables into strips.cut eggplant into strips.mince spring onion, ginger, garlic.
2 mix salt, sugar, vinegar, soy sauce, chicken essence, sesame seed powder into a small bowl of seasoning.
3 heat the pot with oil, use plenty of it. Add in minced garlic, ginger, spring onion and chili paste, stir-fry until fragrant.
4 add vegetables.stir-fry.
5 after vegetables are soft, pour seasoning sauce into the pot, stir-fry evenly, then finish cooking.
Tips:
To reduce oil absorption by eggplant, soak in salt water first and coat with starch before frying.
