How to Make Spicy Pepperheads Fish Head

Main ingredient: fat head carpFish head1 piece (about 2 pounds)
Ingredients: 1 scallion, 3 slices of gingerGinger3 slices
Seasonings:Chopped pepper sauce, 230g, salt, 1/2 teaspoon, cooking wine, 2 teaspoons (10ml), vegetable oil, 50ml, sesame oil, 1 tablespoon (15ml)230g, salt 1/2 teaspoon, cooking wine 2 teaspoons (10ml), plant oil 50ml, sesame oil 1 tablespoon (15ml)
Preparation:
Wash the fish head and cut it in half from the body part, keeping the skin connected for two parts, then dry with paper towels.Fish headthe two parts connected, pat dry the inside and outside surfaces of the fish head with paper towels;



Steps:
1. Sprinkle a little salt and cooking wine on the fish head and rub evenly on both inside and outside surfaces;
2. Place the cut scallions and ginger slices into the fish head for marinating for 10 minutes;
3. Heat up a pan with vegetable oil, then add in the scallions and ginger slices to fry out the aroma;
4. After frying out the fragrance,Aromatic oilfilter and set aside;



4. Remove the scallions and ginger pieces, place them on a serving plate;
5. Place the marinated fish head skin side up on the plate, spread a layer of chopped pepper sauce evenly;6. Steam in a steamer until steam rises, then steam for about 10 minutes, remove and drain off excess water from the plate;pot, steam for about 10 minutes over high heat, remove from the steamer and drain off excess water in the plate, then pour in the heated green onion oil while hot;
7. Heat the aromatic oil, pour it over hot after heating up again;
8. Finally sprinkle with chopped scallions.



Tips:

2. Be mindful of salt quantity as the chopped pepper sauce already contains salt;
