Stewed SeabreamPreparation Method
1 [Figure 1-2] Clean the sea bass by removing its internal organs, mouth, and tail. Cut into pieces and set aside.Heat oil in a wok and fry some ginger to release their aroma.
2 [Figure 3-4] After frying the ginger and dry chili segments, add the prepared sea bass pieces one by one along with cooking wine, granulated sugar, light soy sauce, and dark soy sauce each in small amount.Finally, add a little water (just enough to cover the sea bass) and bring it to a
boil over high heat.3 [Figure 5-6] When the stew has thickened, add chicken essence and turn off the heat. Serve in a dish and sprinkle chopped green onion over the top.
