1. Rinse the ribs and set aside.
2. Clean the spring onions and ginger, then cut them into segments and slices.

3. In a wok, add cooking oil, and fry Sichuan pepper, fenjiu, and anise until fragrant.
4. Add doubanjiang and stir-fry to release red oil, then add sugar and stir until it melts.
5. Add the onion segments and ginger slices and stir-fry.
6. Add the ribs and stir-fry while adding rice wine and old soy sauce to mix well.
7. Add seafood sauce.
8. Add an appropriate amount of water; as the electric pressure cooker retains less moisture, you don't need to add too much water.
