Eggplant
Ingredients:
1 One pound eggplant, cut into dice, mixed with a spoon of salt and marinated for 20 minutes.
2 Two tablespoons of cooking wine.

Star anise(Large star anise) two pieces.
4 Three green onions, chopped.
5 Three garlic cloves, sliced.

one cuppas of coffee mixed in a bowl.8 One tablespoon of starch mixed with water for the thickener.
Method:
1 Squeeze out the water from the marinated eggplant pieces.
2 Fry the eggplant slices in oil until golden, then remove and drain.
3 Wipe the pot clean, add a little oil, heat to about 50% hot, then add chopped onions, garlic slices, and star anise. Stir-fry until fragrant, then return the fried eggplant and stir-fry together.
4 Add cooking wine, all the seasonings in the bowl (Doubanjiang, soy sauce, sugar, MSG), and half a cup of broth or water. Bring to a boil then thicken with the starch mixture.
5 Add coriander.
6 Stir well and serve in a dish.

EggplantPreparation method:
1, Cut eggplant into slices. Fry the eggplant in oil (eggplants absorb a lot of oil, so use more oil than usual).
2, Stir-fry the half-cooked eggplant until almost done, then add chopped green onions and garlic.
3, Season with a little salt (a small amount), vinegar (to taste), and soy sauce (for color).

4, After the eggplant is fully cooked, add two spoonfuls of sugar, stir-fry for a couple of seconds, then serve.
5, Remove from heat and serve in a dish.
