Three yellow chickens,alcohol seasoning,
chili powder,scallions, garlic,
ginger,,
soy sauce,salt, sugar,
vinegar. Steps:
Rinse the chicken and cut into pieces.Add scallions, ginger, and alcohol seasoning to the pot just before the water starts boiling.Boil for 10 minutes after the water comes to a boil.Do not boil too long to keep the meat tender.
Chickenshould be relatively tender.
2) After cooking, immediately transfer the chicken into cold water, preferably ice water, to shock it.This makes the skin fine and smooth, crispy and less likely to fall apart.
3) Rinse the scallions, ginger, and garlic, then chop them finely.Heat oil in a pan until it's about 60% hot. Add chopped scallions, ginger, and garlic, stir-fry until fragrant, turn off heat, pour over the chili powder to settle for a while, and strain out the oil; this is red oil.(Note: If you don't have a strainer, remove the scallions, ginger, and garlic first before pouring the hot oil into the chili powder.)
4) Remove the chicken from the ice water, drain it dry, cut into small pieces, and place them on a plate.
5) Mix soy sauce, salt, sugar, vinegar with two tablespoons of red oil. Stir well and pour over the chicken. You can add some coriander, scallions, or sesame seeds according to your taste.
If you don't have them, it's okay not to use them!Rinse the chicken and cut into pieces.
