Ingredients:
Chicken breast (
thigh meat is better),chili peppers (best to use pickled chili peppers),
scallions,ginger,
garlic,eggs.
EggsSeasonings:
salt,
soy sauce,
milk wine,sugar,
cornstarch, chicken powder,vinegar,
chicken broth,
(or water).Steps:
1. Clean the chicken breast, remove the tendons and cut into small pieces;
Clean and slice the scallions, ginger, and garlic.2. Place the chicken pieces in a container, mix with salt, soy sauce, milk wine, and chicken powder for marination;
Wash and cut the chili peppers into small pieces;Blend egg whites, cornstarch, and water to form a thin paste;Mix soy sauce, salt, milk wine,chicken powder, cornstarch, sugar, and chicken broth for the seasoning sauce.
3. Heat a wok over medium heat and add an appropriate amount of oil; coat the chicken pieces with the thin paste before frying until cooked through, then add the chili peppers, scallion, ginger, and garlic, stir-fry until fragrant, pour in the soy sauce, salt, milk wine, chicken powder,
cornstarch, sugar, and chicken broth seasoning sauce, quickly toss to combine, and finally add a small amount of vinegar before serving.
Mixed cornstarch, sugar, and chicken broth for the seasoning sauce, quickly stir-fry, then add a few drops of vinegar before removing from heat.
