RecipeThe main ingredient is
Rohu fish,cleaned and seasoned with salt, cooking wine, starch,
ginger,and garlic, marinated for half a day.Cut in half, place on a baking tray, baked at 400F (around 180-200 degrees) for 20 minutes, then broil for another 5 minutes.Heat some oil in a wok,add two tablespoons of
doubanjiang sauce,and two tablespoons of old dry chilli oil.Add garlic sprouts.
Then add a can of chicken stock,bring to a boil, and pour over the baked fish,then put back into the oven for another 10 minutes.
Before serving, place dried chili on top of the fish,heat two tablespoons of oil,pour it over the dried chilies,
top with cilantro and scallions., after boiling, pour over the
baked fish, place in
ovenfor ten minutes.Just before serving, put dried chili peppers on the fish, heat two spoonfuls of oil, and pour it over the chili peppers,
corianderseeds and chopped green onions.
