Honey Yuzu TeaSimple preparation method:
1 Materials needed: one yuzu, 500g honey, 100g rock sugar, a spoon of salt, and an appropriate amount of water;
2 Rub the yuzu with a layer of salt to clean it thoroughly;Use a knife to thinly remove the outer green-yellow peel, thin, as little white pith as possible, or it will be very bitter.
3 Remove the yuzu flesh and tear it into small pieces;The removed yellow skin should be cut into about 3 cm long strips with a thickness of approximately 1 mm; the finer, the better;Soak the prepared yuzu peels in salt water for a night;Remove the yuzu sections and peel off the outer skin, keeping only the pure flesh, soak them in salt water overnight.
4 After soaking, remove the yuzu peels and fruit pieces from the saltwater, add clean water, and boil over medium heat for 10 minutes until soft and bitter-free;
5 Place the processed yuzu peels and fruit into a clean dry pot, add a small bowl of water and rock sugar, simmer over low to medium heat for 1 hour, making it sticky with golden-yellow peel; stir frequently to avoid sticking.
6 Let it cool down, then add honey and mix well. Once mixed, pour it into a sealed jar and store in the refrigerator; when drinking, warm up with some water.
Salt is a magic tool to remove bitterness. After step 4, check if the bitterness has been removed before proceeding to step 5; otherwise, continue the saltwater soaking and boiling process.Go for it!Wishing you success!
