1 Pre-fry firstthe eggs.The eggs should be added to hot oil and not stirred too evenly, as this will result in a pleasing yellow and white texture when cooked. Do not over-cook the eggs; unless you want them broken into pieces for mixing.
2 Once the eggs are done, add some oil to frytomatoes.Cut the tomatoes into small pieces so they release more juice quickly. Add salt after 1 minute and a little sugar to prevent it from being too sour. If you prefer a sweeter taste, add more sugar.After adding the seasonings, put in the cooked eggs and fry for no more than one minute before removing from heat.
