Tips for Making Sliced Pork Stir-Fry

FamilyStir-fried Meat SlicesThese are often not as tender as those from restaurants, but there's a trick to it.

1. Keep the meat slices moist; if they are dry, soak them in water first.

2. Marinate the meat slices with some starch or flour.

3. Blanch the marinated meat slices in boiling water before stir-frying.

4. Blanch the marinated meat slices in warm oil before stir-frying.

5. You can also directly stir-fry the marinated meat slices; use more oil and a lower heat.

6. Add some plant or sesame oil to the marinated meat slices, mix well, then stir-fry them.

7. Before flavoring, marinate the meat slices withmangofor tenderness for half an hour before stir-frying.

Freshness Method

Place the sliced meat in a bowl and add some salt, soy sauce, egg white, water starch, scallion,gingerjuice. Mix well, then bring water to a boil and add the meat slices while stirring to prevent sticking.Once the meat turns white, remove it and cool it in cold water, then drain off excess moisture.Heat another wok with oil and stir-fry somegreen vegetables,cucumber,bamboo shoot,garlic sproutetc. until nearly done, add salt and a littlechicken broth, then add the meat slices and stir-fry briefly before addingmonosodium glutamate (MSG)and serve.
