There are three steps involved.

2 After boiling for about one minute, add a small bowl of cold water, then continue to boil until it comes to a boil again;It is best to stir during this step as well.
3 Once the water boils again, add another small bowl of cold water and continue to boil until it comes to a boil once more;Stirring is mostly unnecessary at this stage.
4 Boil until the water boils for the third time;This marks the end of the process, turn off the heat, and your dumplings are ready to eat!
Two points to note: 1 Keep the pot open throughout; do not cover it!2 If any part is still undercooked after three boils, repeat step four. However, this happens in less than 99% of cases!
Another method involves pre-boiling the water.
The water should not be too little to avoid sticking at the bottom.After boiling the water, add frozen dumplings (no need to thaw) and stir continuously with a spoon along the edge of the pot to prevent them from sticking together.
When the water boils again, add cold water until it comes back to a boil.For meat-filled dumplings, this should be done 2-3 times; for vegetable-filled dumplings, twice. Then remove them.Vegetable filling should be boiled twice, then drained.
