How to Make Fried Stinky Tofu

Ingredients:

Main ingredients:NorthernTofu1000 grams,

Seasonings: 100 grams of vegetable oil,Chili oil50 grams,Soy sauce50 grams,MSG2 grams, 25 grams of sesame oil

Method:1. Place alum in a bucket, then pour boiling water into it and stir with a stick; subsequently, add tofu, soak for 2 hours, then remove and cool;

2. Reinsertbrine, the soaking time depends on the firmness of the tofu, harder ones require more time, softer ones need less;

3. After brining, rinse with cold water briefly, place in a sieve to drain, the rinsing water can be reused until it becomes concentrated and added back into the brine;

4.Chili oil, soy sauce, sesame oil, MSG, and some broth mixed together as a sauce;

5. Heat the oil until boiling, then add the brined tofu piece by piece into the pot, fry for about 5 minutes to achieve an outer crust while keeping the inside tender, remove after frying;

6. Drain the excess oil and serve on a plate; use chopsticks to make a hole in the center of each tofu piece, pour the mixed chili oil sauce over it and serve.
