Ingredients:Bull's tail,Mung beans,Scallions,Ginger,Cilantro,Mung beans, star anise,Red dates,
Yam slices, cardamom pod
1. Soak yam slices in water to soften.
2. Soak red dates in warm water beforehand.
3. Slice scallions and ginger, mince cilantro.
4. Boil bull's tail in cold water until it is clean of blood water, then remove and rinse with warm water.,Wash off the foam, remove it, and rinse with warm water.
5. Add scallion segments, ginger slices, star anise, cardamom pod
6. Bring to a boil over high heat and skim off foam.Add cooking wine.
7. Lower the heat and simmer for 90 minutes, then add mung beans.
8. Continue to simmer for another 30 minutes after adding red dates.
9. Season with salt at last.
10. Sprinkle cilantro over it, and serve.
