Cooking winePreparation:
1. Place pork chunks in a cold pot and bring to a boil; remove after boiling, discarding the cooking water.Rinse the pork with water to remove foam.
2. In a heated pan, add oil, then put in cinnamon bark, Sichuan pepper, star anise, dried red chili peppers, stir-fry until fragrant before adding the pork chunks.Stir-fry.3. Slightly fry out some of the fat, then add scallion segments, cooking wine,sugar
and soy sauce.
Use a generous amount of soy sauce; cook over medium heat to let the meat absorb the sauce.
4. Once the pork is coated in soy color, pour in water until it covers the meat completely.5. Season: add salt, vegetable MSG, ginger powder and five-spice powder.
6. Cook over low-medium heat for 20 minutes; then add the pre-washed dried tapioca noodles.
