How to Make Bread: Steps Explained

Ingredients

  milk powder60 grams, egg whites 1 piece, fine sugar 25 grams,egg yolks3 pieces,high-glutenflour360 grams,milk90 gramsyellow cream(plant-based) 55 grams, yeast 5 grams, salt 4 grams,milk90 grams

Steps

.1. Heat the milk and add in the yeast, mix well and let it sit for 10 minutes.

.2. Put all ingredients except cream into a mixing bowl and knead to form dough (I kneaded poorly because I don't have patience).

.3. After 15 minutes, add in the cream and continue kneading until you achieve an extensible stage (I didn't get there, I don't know what that stage looks like either haha) let it rise twice its size.

.4. Divide and round the dough, rest for 20 minutes, then roll out and relax for 10 minutes, followed by rolling again, relaxing, repeating until done.

.5. Place the dough in a loaf pan and let it rise again.To an extent of level with the mold (I didn't get there fully, only about 80%, and I also divided unevenly haha).

.Preheat the oven to 180°C at the bottom and 180°C on top for 15 minutes, then cover with foil and bake at 150°C for another 20 minutes.Ingredients

high-gluten flour 250 grams,

sugar50 grams, yeast powder 3 grams, salt 2 grams, milk powder 10 grams, egg liquid 20 grams, water 145 grams,butter20 gramsSteps

.1. Except for the butter, put all ingredients into the bread machine and mix to form a dough with slight elasticity, add in the butter and knead until you can stretch it out to see a transparent film, then let it rise to 2.5 times its size.

.9. Preheat the oven to 180°C, bake at middle rack, bottom heat 15 minutes, then switch to top and bottom heat for another 20 minutes (cover with foil when coloration is achieved).

Steps.1. Mix all ingredients (except butter, raisins and sunflower seeds) into a dough using the bread machine's kneading program for 15 minutes, then add in the butter after another 15 minutes, and include raisins during the final knead until you achieve an extensible stage, then let it rise to 2.5 times its size..2. After rising, divide into nine parts, round them off and rest for 15 minutes..3. Place one in a paper cup on a baking tray, repeat with the remaining portions until all are done, let rise again to twice their size..4. Brush the surface of each bread with egg wash and sprinkle sunflower seeds..5. Preheat the oven to 180°C, bake at middle rack for 20 minutes (cover with foil when the bread is colored).

Method

1. Knead all the ingredients (except butter, raisins, and sunflower seeds) into a dough using the bread machine's kneading program for 15 minutes. Add the butter after another 15 minutes, then add the raisins and continue kneading until the dough has a good gluten structure before performing basic fermentation.

2. Let the dough rise to about 2.5 times its original size, then divide it into 9 portions, round each one, and let them rest for 15 minutes.

3. Place paper cups on a baking sheet and place a rounded ball of dough in each cup. Allow the dough to rise again until doubled in size.

4. Brush the top of the small breads with egg wash and sprinkle with sunflower seeds.

5. Preheat the oven to 180 degrees Celsius, bake on the middle rack using bottom and top heat for 20 minutes (cover with aluminum foil when the bread starts browning).
