Adzuki beans 200g, kelp 25g, aromatic herb (also known as stinky grass) 2g / dried tangerine peel 1 small piece.
Tangerine peel.Dried tangerine peel needs to be soaked in water, the inner pulp scraped off, then washed. Aromatic herb just needs to be washed.
Steps:
1. Adzuki beans: If lazy, clean and soak for half an hour, leave aside; if wanting a better texture, remove the adzuki bean shell.
2. Aromatic herb / dried tangerine peel: If using dried tangerine peel, it needs to be soaked in water until soft, scrape off the inner pulp, then wash. Chop finely if you like a stronger flavor, or leave larger pieces but don't omit this ingredient.Kelp: Soak and cut into small segments; for a firmer texture, cut wider; for a smoother texture, cut finer.
In the meantime, bring a pot of water to a boil. Add adzuki beans, aromatic herb / dried tangerine peel, kelp, and simmer for about 2 hours, adding more water when needed to prevent burning or sugar caramelization.
