1. Put the tofu in boiling water to cook through, then remove and cut into 2.7 cm long, 1.3 cm wide, 0.7 cm thick diamond-shaped pieces.
2. Beat the egg into a bowl, add some wet starch, mix well to form an egg slurry, set aside for later use.
3. Place the wok on high heat and put in oil until it reaches about seven-tenths hot, then dip each tofu piece in the slurry and fry them one by one until golden yellow, then remove with a colander and drain off the oil.
