How to Make Improved Yellow Braised Chicken

Ingredients: (1 tablespoon = 15ml, 1 teaspoon = 5ml)
Main ingredients: half a whole chicken
Seasonings: driedmushroomsan appropriate amount of,driedmushrooms10 piecesginger1 piece, and driedchilies3 piecesgreen onion1 piece, garlic 2 cloves
Seasonings: cooking wine 2 tablespoons, oyster sauce 2 tablespoons,soy sauce2 tablespoons, dark soy sauce 1 tablespoon, salt 1/2 teaspoon,sugar1 teaspoon



Steps:
1. Cut half a chicken into large pieces, soak dried mushrooms and dried black fungus in warm water, peel and slice ginger, slice garlic, and chop green onion.
2.Place the chickeninto a large bowl, add ginger slices, cooking wine, and oyster sauce.
2. Mix thoroughly, cover with plastic wrap, and marinate for 15 minutes.
3. Place the marinated chicken along with its marinade into an instant pot.Pressure cooker



4. Add soaked black fungus, mushrooms, garlic, and red chilies.
5. Adjust to appropriate amounts of soy sauce and dark soy sauce according to taste.
6. Add salt and sugar as needed, mix well.
7. Add water to the level two-thirds of the ingredients,ingredientsand stir evenly. Choose chicken or duck function and cook for 10 minutes. Release pressure after cooking, then add green onion and cover with lid to steam for 3 more minutes.



Tips:
1. If no instant pot is available, you can use a regular pot; extend the cooking time as needed;
2. The water retention function of an instant pot is very good, so there's no need to add too much water, which will make the meat taste richer.
3. Add green onion at the end, using residual heat for steaming, making the dish's aroma more intense;
4. With this ingredient method, you can cook other meats in a similar way, and they will also be delicious.
