山药米拌汤
简介
山药米拌汤是甘肃省著名的汉族小吃。用凉州小米与洋芋(凉州多称洋芋作“山药”)做成。
做法
选凉州小米淘洗干净,下入砂锅,用旺火煮至八成熟,把切成方块的洋芋投入,并撒少许面粉,用木勺使劲搅匀,调盐。烧些许清油,炝入葱花,再加切碎的酸白菜即成。当地有“要吃凉州饭,山药米拌汤”之说。
