食材准备
茄子、姜蒜米、葱花、泡红椒米,白糖、醋,味精、水豆粉、料酒、色拉油各适量。
方法步骤
1.将茄子洗净,去皮,改成条,入油锅中炸熟。
2.锅置火上,注入色拉油烧热,下泡红椒爆香。
3.烹入料酒,再下姜、蒜爆出香味,倒入炸熟的茄子炒匀。
4.调入白糖、味精、胡椒、醋,放入葱花,勾入水豆粉,炒匀起锅即成。
小贴士
1.茄子炸后应沥干油,以防油脂过重。
2.醋和葱不宜在锅中久炒,以葱香、醋香溢出时为佳。
