Chop the green onion finely; mix mung bean powder and wheat flour in a large bowl, then gradually add 180 grams of water while stirring until it becomes smooth batter without lumps.2. Heat the pan over medium heat and pour some oil inside; swirl the pan to coat the edges with oil. Scoop about one-quarter portion of the batter into the pan using a spoon, immediately rotate the pan to spread the batter evenly across the surface.

3. Crack an egg in; break the egg so that its yolk and white are evenly spread over the pancake. Before the egg liquid sets, add green onion and shrimp chips, then fry for a moment before flipping the pancake over and cooking it for another minute until done.
