How to make Doubanjiang Beer Braised Yellow Croaker:

1 Clean the yellow croaker and wash it thoroughly. Make a few slashes on both sides of the fish, sprinkle with white pepper powder., season each side with half a spoonful of white wine, rub well with your hands, let it sit for ten to twenty minutes.2 Heat a wok with some oil, add the marinated yellow croaker and fry until golden on one side. Flip the fish and fry until both sides are golden brown. Drain off the excess oil from the pan.


3 Add chopped ginger and garlic in the same pot and stir-fry until fragrant. Pour in a spoonful of cooking wine, one and a half spoons of seafood soy sauce, a can of beer, two spoons of Pixian Doubanjiang sauce, and a spoonful of brown sugar. Stir well, cover the pot with a lid, and simmer over low to medium heat for about 15 minutes until the sauce thickens.


4 Once the sauce has reduced and thickened, turn off the heat and garnish with some chopped small fresh coriander before serving.
