Fresh Yushan's ingredients:Dioscorea bulbifera (Yam)250g,Tapioca pearls100g of tapioca starch,Sugar2 tablespoons, 5 tablespoons of hot water,Sweet potato250g, 100g of tapioca starch, 1 tablespoon of sugar, 2 tablespoons of hot water
Method for making Fresh Yushan:
1. Peel and cut the yam and sweet potato into small pieces, place them in a bowl and steam them using a steamer or microwave.Steamormicrowaveuntil they are fully cooked.
2. After steaming, mash the cooked yam and sweet potato with the back of a knife to make a paste. Gradually mix the tapioca starch into hot water using chopsticks, then add this mixture to either the yam or sweet potato paste, knead until it forms a soft yet non-sticky dough.


3. Knead the dough into long strands and cut them into small pieces to make yushan and tuber pearls.
4. Boil water in a pot and add the made yushan or tuber pearls, cook until the water boils again, then remove when the yushan or tuber pearls float to the surface.
5. You can serve the cooked yushan or tuber pearls with sweet soup or cold desserts.
