1. Clean the chicken wings, use scissors to cut the tendon at one end of the chicken wing, then gently push it down until it detaches from the bone, and cut off about two-thirds of the detached part, leaving about one centimeter of the bone inside.

2. Prepare shrimp and green peas, marinate the shrimp by making a slit with a knife to remove the vein, wash and drain the water, then blanch the green peas in cold water until soft, and remove them from heat.

3. Use a food processor to blend the green peas into a paste.

4. Place the shrimp meat in a bowl and add 10g cooking wine, 2g salt, 5g ginger, mix well and let it sit for 1 hour.

6. After marinating, mix the shrimp meat and green pea paste evenly, then stuff them into the chicken wings.

7. Mix 1 tablespoon of sugar with 1 tablespoon of osmanthus syrup and 1 tablespoon of oyster sauce to create a glaze.

8. Preheat the air fryer at 200 degrees for 5 minutes, then remove it, brush oil on it, place the chicken wings inside without stacking them, cook in two batches for 10 minutes each, flip and brush the mixture after removing from heat, continue cooking for another 5 minutes, flip again and cook for an additional 2 minutes.
