Shrimp Poached in BrothInstructions:
1. Clean the shrimp and remove the chitin and sand veins. Marinate with cooking wine and a little salt.
2. Wash the broccoli, cut it into small florets, and blanch in boiling water with a bit of salt.Blanched broccoli should be rinsed with cold water, then drained and placed on a plate.
3. Prepare the broth (using old chicken),use half a box in one cup of hot water, and let it steep.4. Cut the green onion, ginger into strips, and garlic into slices.
5. Heat a pot, add a piece of butter, melt it, then sauté the prepared green onion, ginger, and garlic until fragrant.
6. Add the marinated shrimp, stir-fry until they turn red, pour in the broth, cook over high heat, reduce the sauce slightly (salt can be added if taste is light), and serve by flipping out of the pot.
7. Transfer the shrimp to a plate, pour the remaining sauce over it (discard the green onion, ginger, garlic).
