How to make crystal pig's foot jelly?

The steps to make pig's paw jelly:

1. Slice the ginger and cut the scallions into segments.

2. Place the pig's paws in a pot, add ginger slices and scallion segments, blanch for 8 minutes, then rinse with water until completely dry.

3. Pour this mixture into chicken broth and bring to a boil over medium heat; add the pig's paws and ginger slices, simmer for 45 minutes without covering the pot (add water every 20-30 minutes). Then reduce heat to low, add goji berries, and continue simmering for another 5 minutes. Season with salt.

4. Once done, remove the pig's paws, remove the bones, cut into pieces, and return them to the broth. Add osmanthus flowers, then pour the soup mixture into a mold and refrigerate overnight until it sets. Remove from the mold before serving.
