1. Soak the tofu beans overnight, preferably sprouting them a bit.Discard the soaking liquid and rehydrate in fresh water, adding star anise and salt, then cook until slightly tender.

 


2. Wash the eggplants, either tear into strips by hand or cut into pieces; air-drying is ideal but not necessary; peeling is optional.

3. Heat the pot with oil, add stir-fried ginger to fry, then add the eggplants and chili peppers, stir-fry together, pour in water diluted fermented black bean sauce, cook until boiling.Finally, season with salt and vinegar.
