How to make beets hand-made noodles?

Beetroot Handmade Noodles Ingredients:

  NoodlesIngredients:All-purpose flourmound flour2 cups, 1/4 teaspoon salt, 1 egg, 160 ml beetroot juice

Beetroot Handmade Noodles Preparation:

1.Wash the beetroots and remove the leaves. Boil them in boiling water until soft, about 20-30 minutes.Peel off the beetroot skin and boil it in water for an additional 15-20 minutes to extract more red color.Refrigerate the beetroot water for 1 hour before use.

2. Place the flour, salt, egg, and 160 ml of beetroot water in a blender.Mix until a dough is formed; add extra flour if necessary to form a dry dough.

3. After forming the dough, place it on a floured surface.

4. Knead the dough until it is not sticky and wrap it tightly with plastic wrap. Refrigerate for 30 minutes.

5. Cut the beetroot, red radish, and cucumber into fine strips.Red Radishand cucumbers cut into fine strandsPeel the yam, cut it into thin strips, and soak in water.Reserve.

6. Halve the egg and reserve.

7. Divide the dough into 80-gram portions and flatten them with a rolling pin to about 2 mm or your desired thickness.

9. Make the sauce.Blend almonds and olive oil in a blender until smooth, then add the remaining ingredients and mix well. Top the dish with the prepared ingredients and pour the sauce on top!
