1. Wash the deer meat and cut it into pieces;
Slice the wood ear slices.Cut the coriander into segments.2. Heat a wok, add vegetable oil, fry the deer meat until it turns red, then remove it.
3. In the same wok with some remaining oil, stir-fry green onions and ginger, add soy sauce, Sichuan pepper water, fine salt, Shaoxing wine, sugar, MSG, chicken broth, and return the deer meat. Simmer over low heat until the meat is tender, then switch to high heat to bring it to a boil. Thicken with starch slurry, pour in sesame oil, and sprinkle with coriander segments before serving.
3. Remove the remaining oil from the pot, add scallions and ginger to fry, then add soy sauce, pepper water, fine salt, cooking wine, sugar, monosodium glutamate, chicken stock, followed by the deer meat.Bring it to a boil over low heat, simmer until the meat is tender and falling off the bone, then switch to high heat to bring it back to a boil. Stir in cornstarch slurry, drizzle with sesame oil, and sprinkle with coriander segments before serving.
