  • 1. After buying the chilies, select those without damage, wash and air dry them

  • 2. Cut off the long stems of the chilies, chop (wear gloves..or your hands will be in great pain; oil on hands can also work)

  • 3. Put the chopped chilies into a large bowl, add salt, mix evenly and let sit for 20 minutes

  • 4. Prepare a clean jar (make sure it is completely dry inside), put the processed chilies in, seal the jar and you're done

  • Tips

  • 1. The chilies must be air-dried but not dried out.
    2. Ensure there are no damages on the surface of the chilies; otherwise, a whole jar might be ruined.
    3. Add more salt if you prefer stronger taste, but never less, or it will turn sour.
    4. Seal the jar tightly to prevent water and air from entering
