1. Wash the dried mushrooms and soak them in water.Reserve the soaking water for later use.

2. Soak the wood ear in water.

3. Drain and cut the mushrooms in half.

4. Rinse the wood ear.

5. Soak one three yellow chicken in water.

6. Cut the chicken into pieces.

7. In a pot withgingerslicesand Sichuan pepperboiled water, blanch the chicken.

8. Rinse the chicken in clean water to remove any foam.

9. Remove and drain the chicken.

10. Heat a wok with cooking oil, stir-fry the Sichuan pepper and ginger slices.

11. Addsoy sauceand oyster sauce.

12. Stir-fry until very dry.

13. Add mushrooms and wood ear, then add the soaking water of the mushrooms.

14. Simmer until tender but not too dry.
Tips
It is recommended to wash the chicken after blanching.
