Dried Mushroom Stewed Chicken

  • Three yellow chicken1 piece

  • Driedmushroom50g

  • Driedwood ear30g

  • 1. Wash the dried mushrooms and soak them in water.Reserve the soaking water for later use.

  • 2. Soak the wood ear in water.

  • 3. Drain and cut the mushrooms in half.

  • 4. Rinse the wood ear.

  • 5. Soak one three yellow chicken in water.

  • 6. Cut the chicken into pieces.

  • 7. In a pot withgingerslicesand Sichuan pepperboiled water, blanch the chicken.

  • 8. Rinse the chicken in clean water to remove any foam.

  • 9. Remove and drain the chicken.

  • 10. Heat a wok with cooking oil, stir-fry the Sichuan pepper and ginger slices.

  • 11. Addsoy sauceand oyster sauce.

  • 12. Stir-fry until very dry.

  • 13. Add mushrooms and wood ear, then add the soaking water of the mushrooms.

  • 14. Simmer until tender but not too dry.

  • It is recommended to wash the chicken after blanching.
