1. Soak the mushrooms in advance.

2. Cut the chicken into pieces and wash them.

3. Heat oil in a pot.

4. Stir-fry the chicken pieces.

5. Add vinegar, rice wine, soy sauce (fresh), soy sauce (old), sugar, stir-fry evenly.

6. Pour in enough water to cover the chicken and boil over high heat, then switch to low heat and stew for 1 hour.

7. Cut the mushrooms into small pieces.

8. Add them to the pot and cook for 5 minutes.
