SoupStep 1:Prepare ingredients.

Wash the old duck, cut into pieces. Put in a pot with cold water.
Step 3:
Boil over high heat until it comes to a boil. Skim off foam and fat. Reduce heat and continue simmering for a while.Step 4:Add some rice wine, and add yuzhu, shāchēn, and ginger slices together.Step 5:Simmer over low heat for two hours. Season with salt before serving.

Běi Shāchēn and nán shāchēn both exist, but Běi Shāchēn is preferable for soups.
