CrispapplecookieIngredients (about 12 pieces)1 An apple, peeled and cored into small cubes,butteras needed, 1 tablespoon of brown sugar, 1/2 teaspoon of rum2 flour9 tablespoons (I used low flour), 3 tablespoons of butter (about 43 grams), 1/4 cup of brown sugar,egg yolk1 piece, 1/4 teaspoon of baking powder, a little bicarbonate of sodaSteps1 Peel and core the apple, cut into small cubes,ovenPreheat to 350F (175C)2 In a small pot, melt butter over medium heat, then add sugar and apple cubes, stir-fry until they release moisture and dry out again. Add rum, reduce heat and continue stir-frying for about 5 minutes until the apple cubes are slightly sticky3 Put the cooked apple cubes in the oven to bake for about 10-15 minutes, then take out and cool4 Beat butter with sugar, add egg yolk and mix well. Add cooled apple pieces and the flour mixture (baking powder and bicarbonate of soda), fold with a cutting motion until evenly mixed5 Roll the dough into small balls, slightly flatten them, then bake in the oven for 15 minutes
